Winter has well and truly arrived, with the cool mornings making it that little bit harder to get out of bed, its no surprise that we find ourselves reaching for comfort food to help warm up during those oh so cold days.
Not all comfort food is created equally, and with that in mind, I have crafted this wholesome winter salad that is loaded with health benefits and flavour. Sweet potato is rich in vitamin C, which has been proven to help ward off colds and flu and can even speed up recovery time. There is ample protein in the quinoa to help keep you feeling satisfied and full between meals. The pomegranate and goats cheese work perfectly together to create a sweet and salty flavour explosion.
My nourish bowl is:
All you need is: (makes 3 serves)
1/2 cup cooked quinoa
1 cup spinach
1/2 sweet potato diced and baked
10g goats cheese
1/2 cup roasted mixed walnuts and pecans
Combine all ingredients in a large bowl and enjoy 😃
